Kevin's Roasted Cabbage Steaks

Kevin the Bacon isn't usually a cabbage guy, but these charred, tender cabbage "steaks" changed his mind — a fantastic side for any meal, or a hearty main for your vegetarian friends.
Ingredients
- •1 head green cabbage, cut into 1-inch thick steaks
- •2-3 tbsp olive oil
- •fajita seasoning, to taste
- •Grana Padano cheese, freshly grated
- •red chili flakes, optional
Steps
- Slice the cabbage: Cut the cabbage into thick steaks, keeping the core intact so each steak holds together.
- Oil both sides: Brush both sides of each steak generously with olive oil.
- Season: Season generously with fajita seasoning.
- Top with cheese: Sprinkle freshly grated Grana Padano over the top of each steak.

Roast: Roast at 425°F until the edges are charred and the center is fork-tender, about 25-30 minutes, flipping halfway through.

- Finish and serve: Finish with a sprinkle of optional red chili flakes, then serve warm as a side, or as a hearty main for your vegetarian friends.
