Kevin's Seared King Trumpet Mushroom Bites

Kevin the Bacon went full umami-hunter on this one — thick-cut king trumpet mushrooms, scored and seared screaming hot, finished with cracked pepper and finishing salt for a bite that plays like something out of the sea.
Ingredients
- •4-6 large king trumpet mushrooms (bigger is easier to score and sear)
- •2 tbsp high-heat oil (avocado or grapeseed), for searing
- •Fresh cracked black pepper, to taste
- •Finishing salt, to taste
Steps
- Prep the mushrooms: Trim the stem ends level and score a shallow crosshatch into the caps — go gentle, they're delicate.
- Sear hot: Heat the oil in a pan over high heat and sear the mushrooms scored-side down until deep golden.
- Flip and finish: Flip and drop the heat to medium to finish cooking through without scorching.
- Season and serve: Finish with fresh cracked pepper and a pinch of finishing salt.
Kevin's Tip: Go bigger on the mushrooms — the smaller ones are much harder to score and sear evenly.
