  • •black pepper (to taste)
  • •2 small flour tortillas, for chips
  • •2 cups frying oil (350°F)
  • •1 whole egg
  • •1 tsp fajita seasoning

Steps

  1. Remove pit: Halve the avocados and remove the pits.
  2. And pulp: Scoop the avocado flesh into a large mixing bowl.
  3. Hand Crush: Crush the avocado by hand to break it down roughly.
  4. Then Fork: Finish mashing with a fork to your desired guacamole texture.
  5. 1 Lime Juice: Squeeze the juice of 1 lime directly into the bowl and stir in.
  6. 1/2 Orange Juice: Strain the juice of half an orange into the bowl and stir in.
  7. Deseed jalapeño: Slice the jalapeño lengthwise and remove the seeds and pith.
  8. Mince fine: Mince the deseeded jalapeño finely.
  9. Dice tomato: Dice the tomato into small pieces.
  10. Mince cilantro: Mince the fresh cilantro.
  11. Mince 1/4 onion: Mince the quarter onion finely.
  12. Mix Well: Add the minced jalapeño, diced tomato, cilantro, and onion into the mashed avocado and mix well.
  13. S&P: Season the guacamole with salt and pepper to taste.
  14. Homemade Chips: Stack flour tortillas and cut into wedges.
  15. 350° Oil: Fry the tortilla wedges in 350°F oil until golden and crisp. Only the oil temperature was shown on screen — no exact frying time was given, so watch for golden-brown color rather than a clock.
  16. Towel Rest: Remove the fried chips and let them rest on a paper towel to drain excess oil.
  17. OE Egg + Fajita: Fry an egg over easy on a hot griddle, then season with fajita seasoning.
  18. Mix egg & Guac: Plate the fried chips alongside the guacamole and fajita-seasoned egg. Break the yolk and mix everything together with a fork.
  19. Enjoy: Scoop with a warm homemade chip and enjoy immediately.
Kevin's Tip: Hand-crush the avocado first for a chunky base, then finish with a fork — you get better texture control than mashing with a fork alone from the start.
