Kevin's Hot Honey Herb Goat Cheese Peach Bites

Toasted, buttered baguette rounds get a spread of herbed goat cheese, a fan of fresh peach slices, a drizzle of chili-garlic hot honey, and a finishing shower of fresh thyme and flaky salt. Sweet, savory, a little spicy — and by the last bite, "Crazy Good!!!!"
Ingredients
- •4 pieces baguette, thick-sliced
- •1 log Original goat cheese log
- •2 whole fresh peaches, pitted and sliced
- •2 tbsp fresh thyme, minced (divided)
- •2 tbsp Nate's raw organic honey
- •1 tsp chili garlic sauce
- •1 tbsp salted sweet cream butter, for griddle
- •black pepper (to taste)
- •finishing salt (to taste)
Steps
- Prep the peaches: Halve and pit the peaches, then cut into thick slices.
- Mince the thyme: Strip the fresh Soli Organic thyme leaves from the stem and mince finely.
- Herbed goat cheese: Add the goat cheese log to a food processor with the minced thyme and black pepper. Puree until smooth and whipped.
- Slice the baguette: Cut the baguette into thick slices.
- Toast Beautifully: Butter a griddle and toast the baguette slices on both sides until golden. Only a qualitative "Toast Beautifully" cue was shown — watch for golden-brown color rather than a clock.
- Hot honey: Squeeze honey into a small bowl and stir in chili garlic sauce until combined.
- Mise en place: Arrange the toasted baguette, sliced peaches, minced herb garnish, and hot honey — ready for assembly.
- Herb Goat Cheese: Spread the herbed goat cheese generously over each toasted baguette slice.
- Peach Slice: Layer peach slices over the goat cheese on each piece.
- Hot Honey drizzle: Drizzle the chili-garlic hot honey generously over the peach slices.
- Thyme Finish: Sprinkle fresh minced thyme over the top of each piece.
- Finishing Salt: Finish with a pinch of flaky salt over each bite.
- Perfection: Plate and serve immediately while the toast is warm and the honey is glossy.
Kevin's Tip: Puree the goat cheese with the thyme until fully smooth — a whipped texture spreads much easier onto warm toast than a chunky one.
