Kevin's Lemon Pepper Chicken Salad Cucumber Bites

Kevin the Bacon turned a rotisserie chicken shortcut into a bright, herby chicken salad, piled onto crisp cucumber rounds for a bite-sized cool-down.

Ingredients

  • 1 rotisserie chicken, shredded (lemon pepper, original, or BBQ all work)
  • ⅓ cup mayo
  • ⅔ cup sour cream (2:1 sour cream to mayo)
  • Fajita seasoning, to taste
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme, chopped
  • ½ lemon, juiced (optional)
  • 1-2 cucumbers, sliced into rounds

Steps

  1. Shred the chicken: Pull the rotisserie chicken meat off the bone and shred it fine.
  2. Mix the dressing: Combine the sour cream and mayo at a 2:1 ratio and season with fajita seasoning.
  3. Add the herbs: Fold in the chopped sage and thyme.
  4. Combine: Mix everybody up and let everyone get to know each other, folding the dressing into the shredded chicken until fully coated.
  5. Brighten it up: Squeeze in the lemon juice for extra brightness, if using.
  6. Assemble: Slice the cucumbers into rounds and top each with a scoop of chicken salad.
Kevin's Tip: Lemon pepper rotisserie chicken gives the best flavor base here, but original or BBQ work just as well.
