Kevin's Golden Irish Boxty

Half boiled, half raw and grated — this Irish potato pancake plays both sides of the potato personality, gets bound with a whisper of gluten-free flour and buttermilk, then fried in Kerrygold butter until it's as crispy-edged as Kevin's own dry wit. Crowned with an over-easy egg and a spoonful of sour cream, this one earned an actual chef's kiss.

Ingredients

  • •4 whole potatoes, peeled and divided (about half diced & boiled, half grated raw)
  • •½ cup Bob's Red Mill Gluten Free All-Purpose Baking Flour
  • •½ tsp baking soda
  • •1 egg yolk
  • •1 cup lowfat buttermilk
  • •2 tbsp organic chives, chopped, divided (batter + garnish)
  • •salt and pepper (to taste)
  • •1 tbsp Kerrygold Pure Irish Butter (salted), for frying
  • •1 egg, fried over easy (for topping)
  • •1 dollop Daisy sour cream, for topping

Steps

  1. Peel & dice: Peel the potatoes. Dice half of them (about 2 potatoes) for boiling.
  2. Boil: Boil the diced potatoes until fork tender.
  3. Grate the raw potato: Peel and finely grate the remaining potatoes.
  4. Squeeze: Wrap the grated potato in a clean towel and squeeze out as much liquid as possible. Squeeze again — get out every last bit you can.
  5. Mix the dry base: In a large bowl, combine the gluten-free flour and baking soda.
  6. Add the grated potato: Add the squeezed grated potato to the flour mixture and mix well.
  7. Rice & add the boiled potato: Send the fork-tender boiled potatoes through a ricer and fold them into the bowl. Mix well until combined.
  8. Add egg yolk: Crack in one egg yolk.
  9. Add buttermilk: Pour in half the buttermilk and mix, then add the second half and mix well.
  10. Fold in the chives: Add the chopped chives and mix well.
  11. Melt the butter: Melt the Irish butter in a pan over medium heat.
  12. Fry the boxty: Spoon the potato mixture into the pan and press it thin. Season with salt and pepper.
  13. Flip when brown: Flip once the bottom is browned, and cook the other side until golden.
  14. Plate: Transfer the boxty to a plate.
  15. Top with an over-easy egg: Fry an egg over easy and set it on top of the boxty.
  16. Garnish and serve: Top with a dollop of sour cream and a sprinkle of chives. Serve immediately — this is a full-on chef's kiss moment.
Kevin's Tip: The squeeze step matters more than it looks — the drier you get that grated potato, the crispier your boxty fries up.
