Kevin's Applewood Bacon Ranch Wings

Kevin the Bacon doubles down on his own name with this one — mesquite-and-garlic marinated wings, finished in rendered bacon fat, dusted with ranch, and crowned with crispy bacon crumbles.

Ingredients

  • Chicken wings
  • Applewood smoked bacon
  • Minced garlic
  • Avocado oil
  • Mesquite fajita seasoning
  • Dry ranch dressing packet

Steps

  1. Prep the bacon: Mince the raw applewood smoked bacon.
  2. Prep the wings: Nip off and discard the wing tips, then cut the wings at the joints into flats and drumettes.
  3. Marinate: Add the wings to a zip-top bag with 2 tablespoons minced garlic, 4 tablespoons avocado oil, and 4 tablespoons mesquite fajita seasoning. Mix everybody up and let everyone get to know each other.
  4. Refrigerate: Chill for a minimum of 2 hours, up to 24 hours.

  5. Render the bacon: Brown off the minced bacon, then strain it, reserving the grease. Mince the cooked bacon into fine crumbles.
  6. Grill the wings: Grill to an internal temperature of 165°F.
  7. Toss in bacon grease: Toss the wings with a little reserved bacon grease — just enough for everything to stick.
  8. Dust with ranch: Dust a few times with the dry ranch dressing packet, tossing as you go.
  9. Finish and serve: Top with bacon crumbles and enjoy with the most ridiculously huge smile on your face.
Kevin's Tip: Let everybody get to know each other — the longer that marinade sits, the deeper the flavor.
