Kevin's Chicken Asiago Tortellini
Share
A one-pan trip to pasta town — chicken, broccoli, and mushrooms sweat down together, then get folded into a heavy cream and fresh asiago sauce with tender tortellini. Comes together in about 35-40 minutes, start to finish.
Ingredients
- •1 ½ lb chicken breast, diced
- •20 oz fresh tortellini
- •2 cups broccoli crowns, chunked
- •1 cup mushrooms, sliced
- •2 cups spinach
- •1 yellow onion, diced
- •3 cloves garlic, microplaned
- •2 tbsp butter
- •3 tbsp Better Than Bouillon chicken stock
- •1 pint heavy cream
- •1 cup asiago cheese, fresh grated
Steps
- Prep everything: Microplane the garlic (slice it very thin). Dice the onion into ½-inch pieces. Remove the crowns from the broccoli and cut into larger chunks. Slice the mushrooms. Dice the chicken breast.
-
Sweat the aromatics: Melt the butter over medium-low heat and add the onion and garlic. Add the broccoli, then the mushrooms on top, and let everything sweat down together without stirring — don't mix until you're ready to add the chicken. This whole process takes less than 10 minutes.

Add the chicken: Mix everything together well and let it cook about 5 minutes. Make a divot in the center, add the chicken, then mix it through and let it cook for another 2-3 minutes.
2:00
- Steam it out: Add the spinach and the Better Than Bouillon chicken stock. Put the lid on and let it steam until the chicken is cooked about 7/8 of the way through — this gives the chicken a great texture.
-
Cook the tortellini: While that steams, boil the fresh tortellini on a rolling boil for 2.5-3 minutes (fresh only — skip frozen). Set aside once done.
2:30
- Build the sauce: Once the chicken is nearly done, pour in the heavy cream and let it come up to heat. Fresh-grate in the asiago cheese and fold continuously until it melts and fully incorporates.
-
Finish & thicken: Drop the cooked tortellini into the sauce. It may look slightly thin at first — trust the process, it will thicken. Cook about 5 more minutes.

- Serve: Serve warm — great with a side of garlic bread for dipping in the sauce.
Kevin's Tip: For a killer side, mix garlic, butter, and fresh herbs and grill it into bread on a flattop or pan — perfect for dipping in the sauce.
